Shekerbura – The Perfect Harmony of Dough and Filling
Shekerbura is a delightful pastry made from a dough that combines flour, butter, eggs, sour cream, salt, and other ingredients, creating a perfect harmony with its rich filling. The word “Shekerbura” is derived from “sheker” (sugar) and “bura” (a local term). In Azerbaijani culture, Shekerbura symbolizes prosperity. The intricate patterns created on its surface using special tweezers resemble tightly arranged wheat spikes, symbolizing abundance. Additionally, Shekerbura is associated with the moon, and the patterns on its edges and surface resemble moon rays. It is considered an element of air in symbolic traditions.
The History of Shekerbura
It is worth noting that Shekerbura is a unique pastry that cannot be found anywhere else in the world. This sweet treat has been an essential part of the Novruz holiday for centuries. During Novruz, Shekerbura decorates our tables and symbolizes the arrival of the new year and the beginning of spring. The preparation of Shekerbura requires special skills and attention to detail. Women demonstrate their craftsmanship through the delicate patterns they create on the pastry’s surface.
Ingredients and Preparation
Dough:
- 1 kg flour
- 3 egg yolks
- 250 g butter
- 2 tablespoons sour cream
- 1/2 teaspoon yeast
- 1 cup milk (amount may vary)
Filling:
- 500 g peeled hazelnuts (walnuts or almonds can also be used)
- 500 g sugar
After preparing the dough with the above ingredients and allowing it to rest, divide it into small (40 g) portions. Roll out each portion using a rolling pin, place 2 teaspoons of filling inside, and seal the edges carefully to prevent them from opening. Then, twist the edges and use tweezers to create decorative patterns. These patterns not only enhance Shekerbura’s beauty but also give it a unique and delicate charm.
Baking Instructions
Arrange the prepared Shekerburas on a baking tray, ensuring they do not touch each other. Bake in a preheated oven at 170–180°C for 20–25 minutes, making sure not to let the tops brown. Properly baked Shekerburas have a golden color and a delicate, crispy texture. The taste and appearance of Shekerbura reflect the quality of the ingredients and the skill involved in its preparation.
